A brief history of desserts

Pub desserts weren't always the elaborate sweet feasts we're used to today. In times gone by, diners would reach for simple desserts made from fruit and sweetened with honey, and ancient cakes were more similar to bread than our more modern confections. Jellies and custards were popular in Medieval times, but sugar was relatively rare and only used lightly.

Sweet as sugar

It wasn't until the 1800s when sugar became more readily available that puddings and desserts started to look more like the desserts near you in local pubs and restaurants. Dessert cookbooks became more popular because printing became more affordable, and this meant that everyday people could create their own desserts at home.

Beloved recipes

Recipes evolved over time, but many of the puddings that are popular today still have recognisable roots in much older recipes. For example, the origins of sticky toffee pudding are open for debate, but the recipe is said to be more than 100 years old!
