Earlier this year Chef & Brewer launched a competition for members of the public to share their best family recipe to be in with the chance of having their dish added to the menu. Lyn Foxall from Bewdley won the competition for her luxurious rum bread and butter pudding served with a bourbon butterscotch sauce and custard and her dish now appears on the Chef & Brewer menu!

“My Mum is a fabulous cook and inspired me to get into the kitchen from a young age, so when I saw the competition to find the UK’s best family recipe the opportunity was just too good to miss.

“I decided to enter my rum bread and butter pudding. It was one of the first dishes I learnt to make when I was 15, and I still enjoy making it just as much today. It is a firm family favourite so it seemed to fit exactly what the team at Chef & Brewer was looking for. The menu has a lot of classic, hearty family meals so I sent in the recipe and hoped for the best!

“I was contacted to say that my dish had been chosen as the winner and was asked to visit the food development team at Greene King’s office in Burton to show them how to make it.

“It was an amazing experience to visit the food development team, to see the kitchen and learn about how the chefs bring ideas together for new menus and seasonal dishes. To then have to relay an idea, refine so it’s perfection and then ensure it works in terms of catering across the entire group was mind blowing. I was really impressed by the creativity and the tiniest of details considered for every ingredient, it was all very inspiring.

“Every time we eat in my local Chef & Brewer now I will really appreciate everything that’s done behind the scenes to ensure the customers have the best dining experience. 

“And finally to see my own little pudding with my name beside it on the menu makes me feel so proud to have been part of something so very special. I’d like to thank the team at Chef & Brewer!”
